Italians have an expression that I fell in love with.' Buono’ means good, but when said while twisting your pointer finger into your cheek it means ‘good food!’ It was a gesture I became very familiar with while a chef’s intern in Italy preparing, serving and eating food. Hence the name “Buona Cucina” which means “Good Cooking”. Cooking encompasses all the senses: especially smelling, seeing, touching and tasting. It is said that you eat with your eyes first before your mouth has a chance to savor the taste. Good cooking is slow cooking and meant to be drawn out and enjoyed, each flavor paired properly, then savored. First you smell the aroma, your salivary glands start working, and as it is beautifully presented the anticipation builds. Finally, you experience the taste and draw out the experience as long as you can, only to repeat the process.

Italians are masters of this. They never rush the enjoyment of good food, good company, or good wine.
